  • 300milliliter thickened cream
  • 1/2 cup milk
  • 1/2 cup icing sugar
  • 125grams butter, melted, cooled
  • 250grams strawberries, hulled, halved
  • 400grams dark cooking chocolate, chopped
  • 1tablespoons gelatine
  • 2tablespoons cocoa
  • 500grams cream cheese, at room temperature
  • 60grams hazelnuts, dry roasted
  • 250grams plain biscuits

Method

Step 1 of 7

Line a 22cm round springform cake pan with baking paper.

Step 2 of 7

Process biscuits, hazelnuts and cocoa in a food processor until it resembles fine crumbs. Add butter and process to combine. Press crumb mixture into base of cake pan. Chill for 30 minutes or until firm.

Step 3 of 7

Put 300g chocolate into a heatproof bowl. Place over a saucepan of simmering water, taking care that base of bowl does not touch the water. Stir until melted and smooth. Set aside.

Step 4 of 7

Pour 1/3 cup cold water into a microwave safe jug. Add gelatine and whisk with a fork. Stand for 5 minutes to soften. Microwave on high for 30 seconds or until gelatine has melted and liquid is clear. Cool.

Step 5 of 7

Beat cream cheese, icing sugar and milk until smooth. Slowly add gelatine mixture, stirring constantly, until well combined. Stir in melted chocolate.

Step 6 of 7

Beat cream until soft peaks form. Fold a quarter of the cream into chocolate mixture and stir well. Fold in remaining cream and stir until combined. Spoon mixture over base and smooth top. Cover with plastic and refrigerate for at least 3 hours or overnight until set.

Step 7 of 7

Remove cake from pan and transfer to a cake stand. Melt remaining chocolate and spread onto a baking tray lined with paper. Leave to set then break into shards. Top cheesecake with strawberries and shards.
