  • 4 halved Ferrero Rocher, halved (to decorate)
  • 2tablespoons plain flour
  • 180grams milk arrowroot biscuits
  • 300milliliter pure cream
  • 125grams butter, melted, cooled
  • 2teaspoons vanilla extract
  • 300milliliter sour cream
  • 1/2 cup chocolate sauce (to serve)
  • 100grams milk chocolate, melted, cooled
  • 750grams cream cheese, at room temperature
  • 3 eggs (plus 1 egg yolk)
  • 1/2 cup brown sugar, firmly packed
  • 2tablespoons hazelnuts, toasted, chopped (to decorate)
  • 1/2 cup hazelnut meal

Method

Step 1 of 4

Grease a 22x7cm deep springform cake pan. Line the base with baking paper. Break biscuits into a food processor and process until fine crumbs form. Add hazelnut meal and butter and process until combined. Transfer mixture to prepared pan. Using a straight-sided glass, press mixture evenly over base and side of pan (1.5cm below top of cake pan). Chill for 30 minutes to set.

Meanwhile, preheat oven to 160°C. Beat cream cheese, sugar and vanilla in a bowl until smooth. Beat in flour. Add eggs and yolk, one at a time, beating well after each addition. Stir in sour cream and melted chocolate.

Step 3 of 4

Pour mixture into prepared shell. Place pan on a baking tray. Bake in the centre of the oven for 50 minutes. The outer 3cm of cake will feel quite firm and the centre will be wobbly like custard. Turn off oven. Leave to cool in oven with door ajar. When cake is cold, cover and refrigerate overnight.

Step 4 of 4

Transfer cheesecake to a serving platter. Whip cream and spoon over top of cheesecake. Decorate with chocolates and hazelnut. Warm chocolate sauce and drizzle over.
