For the base
- 130grams dates, pitted and chopped
- 40grams walnuts, chopped
- 40grams macadamia nuts, chopped
- 130grams cashew nuts, soaked overnight
- 50grams coconut oil, melted
- 1/3 cup coconut milk
- 1 large lemon, keep the zest and juice
- 1/4-plus 2 extra tsp cup agave syrup
- 25grams strawberries, washed, hulled and lightly mashed
- 1tablespoons canola oil
Description
A creamy, crunchy and fruity dessert.
Method
Step 1 of 3
Prepare a muffin tin by lightly rubbing with canola oil. In a mixing bowl, prepare the base by blending the walnuts, lemon zest, macadamia and dates together.
Step 2 of 3
Scoop the mixture from the blender and pack into the bottom of the muffin tins and allow to set in the fridge. While the base is setting, blend the rest of the other ingredients together apart from the strawberries.
Step 3 of 3
Once they are combined fully, lightly mix the strawberries in and then pour the mixture into the muffin tins on top of the base. Allow the total mix to set in the fridge for a minimum of 2 hours before serving.
