  • 250grams butter, chilled, chopped into cubes

Description

Cheesecake is a much loved Ukrainian dessert and is traditionally made with cottage cheese. Cherries add a delicious sweetness to this simple cheesecake.

Method

Step 1 of 4

Pre-heat the oven 180°C. Beat the eggs, cottage cheese, 100g of sugar and vanilla in a large bowl with a handheld electric mixer.

Step 2 of 4

In another bowl, rub the flour, remaining sugar and cubes of butter together until it resembles breadcrumbs. Line a deep rectangular baking tin with parchment paper and press the mixture into the base, smoothing with the back of a spoon.

Step 3 of 4

Dot half of the cherries on the base, pour over the cheese mix and top with the rest of the cherries.

Step 4 of 4

Bake for 25 minutes until lightly browned and leave to cool for 30 minutes before chilling in the fridge for 1 hour. Slice and serve.
