  • 180grams white chocolate, broken into pieces
  • 250grams arnotts butternut snap biscuits
  • 80grams butter, melted
  • 125milliliter cream
  • 500grams cream cheesecake
  • 1teaspoons lemon rind
  • 2 eggs
  • 1tablespoons lemon juice
  • 2 mangoes, sliced
  • 2 passionfruit

Decadent cheesecake that will impress your guests.

Method

Step 1 of 6

Preheat oven to 150 degrees C. Line a baking tray with baking paper. Place white chocolate on tray and bake for around 15 mins until it is golden brown. Take chocolate out and turn oven up to 180 degrees C.

Grease and line a round cake tin with removable base.

Step 3 of 6

Crush/ process biscuits to a powder and add melted butter. Mix and then place mixture into prepared tin and spread evenly. Pop into oven for 10 mins to firm up.

Place the cooked chocolate and cream in a saucepan over medium heat. Cook for 5 mins until smooth.

Step 5 of 6

Place the cream cheese and lemon rind in a bowl and mix until smooth. Add eggs, lemon juice and the melted chocolate and mix. Pour over the biscuit base and bake for around 30 mins or until just set. Turn off the oven and open the door a little and leave the cheesecake in there for another 20 mins. Set aside to cool and place in the fridge to chill for about 1 hour.

Step 6 of 6

Arrange the mango on the top of the cheesecake and spoon over passionfruit. Enjoy.
