  • 1/2 cup pure icing sugar, sifted
  • 2tablespoons white rum (optional)
  • 300milliliter sour cream
  • 250grams mango flesh, pureed
  • 2 large passionfruit, pulp removed
  • 16 vanilla mini meringues
  • 250grams cream cheese, softened

Method

Step 1 of 2

Process cheese, sour cream and sugar in a food processor until smooth. Transfer to a bowl, cover and chill for 30 minutes.

Step 2 of 2

Layer cream mixture, biscuits, rum (if using), mango and passionfruit pulp in four 500ml serving glasses. Repeat layers. Serve immediately or cover with plastic wrap and refrigerate for several hours or until ready to serve. Top with meringues just before serving.
