  • 200grams soft cream cheese, at room temperature
  • 200grams condensed milk
  • 2 limes, finely grated zest and juice, plus extra zest to decorate

Step 1 of 2

Line the base of each ramekin with a biscuit. Put the cream cheese in a mixing bowl and whisk with an electric hand whisk until smooth, then whisk in the condensed milk until well combined.

Step 2 of 2

Add the lime zest and juice, whisk until the mixture becomes smooth, thick, and glossy, and divide among the ramekins. Smooth the tops. Chill for at least 4 hours, or overnight. Decorate with extra lime zest (if using), and serve.
