  • 1/2 cup red wine
  • 200grams plain chocolate biscuits
  • 500grams cream cheese, at room temperature
  • 70grams butter, melted
  • 1 cinnamon stick
  • 300milliliter sour cream
  • 2 punnet strawberries, hulled
  • 200grams milk chocolate, melted, cooled
  • 1 vanilla bean
  • 2 eggs
  • 1/2 cup raw caster sugar; plus 1/3 cup raw caster sugar

Method

Step 1 of 4

Stir wine, sugar and spices together in a saucepan over medium heat for 4 minutes until sugar dissolves. Simmer for 10 minutes until thick. Meanwhile, slice berries into a bowl. Pour syrup over.

Step 2 of 4

Break biscuits into a food processor and process until fine crumbs form. Add butter and process to combine. Line base of a 22cm-round springform cake tin with baking paper and place onto a tray. Press crumbs over base. Using a slotted spoon, remove half the strawberries from syrup and arrange over base, reserving remainder. Place in fridge for 10 minutes to chill. Preheat oven to 180°C.

Meanwhile, beat cream cheese and sugar until smooth. Add sour cream and beat well. Add eggs, one at a time, beating well. Stir in chocolate. Pour over base. Bake for 45 minutes. Cool in tin for 2 hours. Transfer to fridge and chill overnight.

Step 4 of 4

Remove from tin. Decorate with shards. Serve with reserved strawberries and syrup.
