  • 1 cup passionfruit pulp
  • 300milliliter pure cream
  • 8 waffle cones (to serve)
  • 250grams cream cheese, softened
  • 8 chunky macadamia and white chocolate biscuits, chopped
  • 395grams sweetened condensed milk

Method

Step 1 of 3

Using an electric mixer, beat cream cheese and condensed milk on low speed for about 5 minutes or until smooth. Add cream and beat on high speed for 4-5 minutes or until mixture is thick and firm peaks form. Stir biscuits through mixture. Pour into a 12x23cm loaf tin.

Step 2 of 3

Mix passionfruit with vodka. Swirl through the ice-cream mixture. Cover with plastic wrap and freeze for 6 hours or overnight until firm.

Step 3 of 3

Serve scoops of ice-cream in waffle cones.
