For the base
- 100grams sweet-meal biscuits
- 20grams brown sugar
- 40grams unsalted butter
- 1 small lemon, keep the juice and the zest only
- 50grams strawberries, washed, hulled and 1/2 mashed lightly, 1/2 sliced for garnish
- 1/3-plus 1 extra tsp cup double cream
- 3/4 cup cream cheese
- 20grams sugar
- 1teaspoons vanilla extract
Description
A rich and creamy classic dessert with the sweetness of strawberry.
Method
Step 1 of 3
Prepare a muffin tin by lightly rubbing with canola oil. In a mixing bowl, prepare the base by blending the biscuits, sugar, butter and lemon zest together.
Step 2 of 3
Scoop the mixture from the blender and pack into the bottom of the muffin tins and allow to set in the fridge. While the base is setting, mix the rest of the ingredients together together apart from the strawberries.
Step 3 of 3
Once they are combined fully, lightly mix the strawberries in and then pour the mixture into the muffin tins on top of the base. Allow the total mix to set in the fridge for a minimum of 2 hours before serving with sliced strawberries to garnish.
