- 1 avocado, mashed
- 1/2 cup carrot, grated
- 1/2 stick celery, finely chopped
- 1 small onion, finely chopped
- 1/2 punnet cherry tomatoes, chopped
- 1/2 baby cos lettuce, shredded
- 1 stand 'n stuff mini taco kit
- 500grams beef mince
- 1tablespoons olive oil
- 1/2 cup cheese, grated

Method
Step 1 of 5
Heat oil in a large frying pan. Add onion, celery and carrot and cook over medium heat for 5 minutes or until softened.
Step 2 of 5
Add mince and cook for 5 minutes, stirring with a wooden spoon to break up any lumps. Add Taco Spice Mix and stir for 1 minute.
Step 3 of 5
Add 3/4 cup water and tomatoes, simmer for 2 minutes or until sauce thickens.

For crunchy taco shells, follow on pack instructions.
