  • 3 sheet frozen puff pastry, just thawed
  • 3/4 cup icing sugar
  • 40grams butter, melted
  • 1/2teaspoons vanilla extract
  • 2 small apples
  • 1/3 cup apricot jam, warmed, strained
  • 1 egg white, lightly whisked
  • 1 cup almond meal

Method

Step 1 of 5

Preheat oven to 200°C. Line a baking tray with baking paper.

Step 2 of 5

Mix almond meal, sugar, egg white and vanilla together until combined.

Step 3 of 5

Lay pastry sheets on the bench. Cut out 12 rounds using a 9cm cutter. Layer 2 rounds on top of each other to form 6 pastries. Spread top of each with 1 tbs of the almond paste, leaving a small border around the edge.

Peel and thinly slice the apples. Brush with butter. Layer slices on top of the almond paste.

Step 5 of 5

Transfer to tray and bake for 25 minutes or until puffed and golden. Glaze with jam while warm.
