  • 2 multigrain corn thins (for snack)
  • 1tablespoons tomato paste no added salt (for Italian meatballs)
  • 1/4 Continental cucumber, cut into batons (for snack)
  • 8 cherry tomatoes (for snack)
  • 30grams tasty cheese, cut into sticks (for snack)
  • 1tablespoons hummus (for snack)
  • 1/2 cup red grapes (for snack)
  • 150grams beef mince (for Italian meatballs)
  • 1 slice wholemeal bread (for Italian meatballs)
  • 1tablespoons parmesan cheese, shredded (for Italian meatballs)

Method

Step 1 of 3

Italian Meatballs: Process bread in a food processor until crumbs form (to make 1/4 cup breadcrumbs). Place in a medium bowl with mince, tomato paste and parmesan. Use clean hands to mix until well combined. Roll mixture into 8 balls.

Step 2 of 3

Heat a large non-stick frying pan over medium heat. Spray lightly with oil. Cook meatballs, turning, for 6-8 minutes or until golden and cooked through. Set aside to cool, then cover and refrigerate until needed.

Step 3 of 3

Pack half the meatballs in a small airtight container next to frozen drink or cool brick in lunch box to keep cool. Wrap remaining meatballs in an airtight container in the fridge.
