Master Beef Stroganoff

- 60grams butter
- 2 brown onions, sliced
- 1/4 cup continental parsley, chopped
- 400grams small button mushrooms
- 300grams cooked fettucine pasta (to serve)
- 300milliliter light sour cream
- 2tablespoons paprika
- 1 lemon
- 1kilograms beef stir-fry strips
- 2tablespoons olive oil
Method
Step 1 of 9
Mix beef and paprika in a bowl until well combined. Set aside.
Step 2 of 9
Halve or quarter the mushrooms if they are too big.
Step 3 of 9
Heat butter in a large frying pan over medium heat. Add onions and cook until soft and pale golden but not browned.
Step 4 of 9
Increase heat to medium-high and add mushrooms. Cook, stirring constantly until they are golden brown. Transfer to a bowl.

Add half of the oil to the pan and heat over high heat. Add beef in batches, adding more oil if needed and cook until well browned.

Keep the meat moving so that it doesn't stew. When all of the meat has been browned, reduce heat to low.

Add sour cream to pan with parsley. Simmer for a few minutes until thickened slightly.

Return meat, onions and mushrooms to pan and cook until reheated.

Serve with pasta and squeeze over lemon juice.
