Description

Creamy mashed potatoes loaded with flavour from punchy Dijon mustard and chives. With olive oil for extra silkiness, this tasty potato mash won't last long.

Method

Step 1 of 2

Place potato and garlic in a large saucepan and cover with cold water, then bring to the boil over medium-high heat. Reduce heat to medium and simmer, uncovered, for 25 minutes or until potato is just tender, then drain. Return potato to saucepan over low heat and shake pan gently for 30 seconds or until any remaining water evaporates. Add milk, oil and mustard. Mash until smooth. Season.

Step 2 of 2

Spoon mash into a serving bowl. Season with pepper. Serve topped with extra oil and chives.
