  • 1/3 cup Woolworths sun-dried tomato strips, 1 tbs oil from jar reserved
  • 2 chicken breast fillets, cut into 2cm pieces
  • 2 cloves garlic, finely chopped
  • 2teaspoons plain flour
  • 385milliliter Woolworths evaporated milk
  • 1/4teaspoons Woolworths dried Italian herbs
  • 300grams Woolworths large pasta shells
  • 1/2 lemon, zested, juiced
  • 60grams baby spinach leaves
  • 1/4 cup finely grated parmesan

Description

It's rumoured that the flavours in this one-pan dish are so good, the person you serve it to will ask you to marry them! That might be thanks to the juicy combination of sun-dried tomatoes, garlic and zesty lemon in this creamy chicken pasta.

Method

Step 1 of 4

Heat reserved oil in a large deep frying pan over medium heat. Add chicken. Cook, turning once, for 3 minutes or until lightly golden. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Add flour. Cook, stirring to coat the chicken, for 1 minute.

Step 2 of 4

Add milk, tomato strips and herbs. Stir to combine. Simmer for 4 minutes or until mixture thickens slightly.

Step 3 of 4

Meanwhile, cook pasta following packet instructions. Drain, reserving ½ cup cooking water.

Step 4 of 4

Remove frying pan from heat. Stir in lemon zest, juice and reserved cooking water. Season. Add pasta, spinach and half of the parmesan. Toss gently until combined and spinach has wilted slightly. Divide among serving bowls. Top with remaining parmesan. Serve.
