- 175grams ready-to-eat soft dried apricots
- 1 orange, zested
- 100grams ricotta (to serve)

Method
Step 1 of 2
Chop the dried fruit into bite-sized pieces, place in a bowl, then drizzle with the dessert wine or Marsala. Leave to marinate for several hours, or overnight, so the fruit softens and absorbs the alcohol.

Decorate with orange zest and serve with dollops of ricotta.
