Salad Dressing
  • 2tablespoons lime juice
  • 1tablespoons maple syrup
  • 2tablespoons EV olive oil
  • 2tablespoons pomegranate juice
  • 1 large mango (small cubes)
  • 1/2 pomegranate seeds
  • 1/2 red onion, thinly sliced
  • 1/2 punnet blueberries
  • 60grams salad leaves (your choice)
  • 1/4 cup macadamia nuts, toasted, lightly chopped

Description

A fruity, savoury salad to enjoy using in season delicious mangoes.

Instruction tip
Leftover pomegranate seeds can be frozen for later use.

Method

Step 1 of 4

Toast macadamia nuts in a small dry pan until nicely browned - set aside to cool, lightly chop.

Step 2 of 4

Into a large salad bowl, add salad leaves, then layer mango, pomegranate seeds, red onion and blueberries.

Step 3 of 4

Mix dressing ingredients together in a screw top jar, shake well and pour over salad. Sprinkle over mac nuts. Serve and enjoy!

Step 4 of 4

Salad best consumed day of making.
