Method
Step 1 of 2
Prepare the dressing by combining the oil, balsamic and mustard and set to one side. Slice the tomatoes and place on a bed on rocket.
Step 2 of 2
Add the goats cheese to the top of the tomatoes and then drizzle with dressing. Garnish with the basil before serving.
