Smoked Salmon Salad with Sesame Dressing

- 2 eggs (from fridge)
- pinch salt (as needed to boil eggs)
- pink salt (to taste)
- black pepper (to taste)
- 3-4teaspoons garlic powder
- tablespoons a few dried parsley
- 2tablespoons cheese
- 2 cup corn
- 4 tomatoes
- 1 large zucchini (or cucumber)
- 300-450grams spinach
- 2tablespoons greek yoghurt
- cheese (sliced or shredded)
- 2tablespoons sesame dressing (from a bottle)
- smoked salmon (a few pieces)
Description
A simple and easy to make salad that is filling either as a meal or snack.

Method
Step 1 of 8
Boil eggs from fridge, for 17-18 mins with some salt.
Step 2 of 8
While eggs are boiling, chop vegetables.

Steam/boil corn kernels. (Or microwave to cook it)

When the timer for the eggs go off, immediately place them in cold water to stop cooking process for 2 mins.
Peel the hard boiled eggs. You can chop them up into bite sized or chunky pieces or serve it whole on top of the salad (if serving individually).

In a bowl, combine the chopped veggies, smoked salmon pieces, cheese and egg.

Add sesame dressing and Greek yoghurt in equal portions.
Step 7 of 8
Season the salad with pink salt & cracked pepper to taste (just before serving).
Sprinkle garlic powder and/or onion powder, parsley & a dash of lime juice to the salad.
Optional: pickled cucumber, capers, chilli flakes.

Mix well and serve.
