  • 2tablespoons sesame oil
  • 500grams chicken breasts, cut into chunks
  • 2teaspoons ginger, diced
  • 2 cloves garlic, peeled and diced
  • 1tablespoons lemongrass, chopped
  • 200grams baby corn
  • 200grams snow peas
  • 2 medium broccolini, chopped
  • 2 medium shallots, sliced
  • 1teaspoons coriander
  • 1teaspoons tumeric powder
  • 1 2/3 cup coconut milk

Description

This kosher chicken curry is packed full of spice and aroma.

Method

Step 1 of 3

Heat up a non-stick pan to a medium heat. Add sesame oil and fry the chopped chicken for 3 minutes while turning.

Step 2 of 3

Remove from the heat and set to one side. In the same pan, fry the ginger, garlic and lemongrass for 2 minutes. Add the vegetables and spices to the pan and stir for an additional 1 minute. 

Step 3 of 3

Return the chicken to the pan and add the coconut milk. All to simmer for 10 minutes. Remove from the heat and serve with a choice of side.
