Description
Kick your festivities off with a bang with these zingy herb and lime air-fryer accordion potatoes. Serve with sriracha sauce for a lip-smacking finish.
Method
Step 1 of 5
Cut potatoes into 1.5cm-thick slices. Place potato slices, one at a time, between two skewers. Cut thin slices vertically along the potato, being careful not to cut all the way through (the skewers will help with this). Turn potato over and repeat the process, this time cutting diagonally along the potato.
Step 2 of 5
Carefully push a skewer through a potato slice and then fan potato over skewer. Place skewer in a bowl of cold water. Repeat the process with remaining potato slices.
Step 3 of 5
Combine butter and garlic and parsley in a small bowl. Drain potatoes and pat dry with paper towel. Transfer to a baking tray. Brush both sides of potato with garlic butter.
Step 4 of 5
Preheat an air fryer to 180°C. Working in batches, place skewers in a single layer in the basket. Slide basket into appliance. Cook for 15 minutes or until golden.
Step 5 of 5
Sprinkle potatoes with parsley and zest, and season. Serve with sauce.
