  • 2tablespoons tamari
  • 100grams bacon, finely chopped
  • 1 brown onion, grated
  • 1 carrot, grated
  • 1/2tablespoons black pepper, freshly cracked
  • 1 zucchini, grated
  • 1/3 cup tomato sauce
  • 1/4 cup Macro LSA
  • 1/4 cup maple syrup
  • 800grams beef mince
  • 2 eggs, lightly whisked
  • 1/4 cup quinoa flakes
  • 2 garlic cloves, crushed
  • 2tablespoons coconut oil
  • 1tablespoons apple cider vinegar

Method

Step 1 of 6

Preheat the oven to 180°C. Line the base and sides of a 23 cm loaf tin with a piece of baking paper, overlapping the sides by 5cm.

Place the mince, onion, garlic, carrot, zucchini, bacon, LSA, quinoa flakes, tamari, coconut oil, coconut milk, eggs and pepper in a bowl. Mix until well combined.

Step 3 of 6

Pack the meat mixture into the lined loaf tin. Bake for 25 minutes.

To make the glaze, mix tomato sauce, maple syrup, and apple cider vinegar together in a small bowl. Set aside.

Step 5 of 6

Remove meatloaf from the oven, pour any remaining juices from the tin and baste the top with the glaze. Return to the oven and continue cooking for a further 25 minutes, or until cooked through. Allow meatloaf to rest in a warm place for 10 minutes before turning out from the tin.

Slice and serve with salad or steamed vegetables.
