- 500grams premium beef mince
- 1 brown onion, grated
- 1 carrot, peeled and grated
- 2 clove garlic , crushed
- 1/2 cup continental parsley, roughly chopped
- 1 1/2 cup fresh breadcrumbs
- 1/4 cup barbecue sauce
- 1 egg, whisked
- 1 rasher bacon, rind removed, diced
- 5milliliter virgin olive oil spray
- 1/4 cup parmesan, finely grated
- 800grams small washed potatoes, halved
- 4 cups baby leaf salad mix (to serve)

Method
Step 1 of 4
Preheat the oven to 200°C. Grease and line a 10x20cm loaf pan with baking paper.
Step 2 of 4
For basic mince mixture, combine beef mince, onion, carrot, garlic cloves and parsley in a bowl. Use in the following recipe or place into a freezer bag, seal, label and freeze for future use.
Step 3 of 4
Combine mince mixture, 1 cup breadcrumbs, barbecue sauce and egg in a bowl. Transfer to loaf pan and smooth top. Combine remaining breadcrumbs, bacon and parmesan in a bowl. Sprinkle over top of the meatloaf.
Step 4 of 4
Line a baking tray with baking paper. Put potatoes onto a tray. Spray with olive oil. Cook both meatloaf and potatoes for 45 minutes until meatloaf is cooked through. Stand meatloaf for 5 minutes before removing from the pan and slicing. Serve with potatoes and green salad.
