- 16 slices leg ham
- 1 pinch pepper (for seasoning)
- 4 slices wholegrain bread, toasted
- 150grams baby English spinach leaves
- 4 eggs
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 4
Preheat oven to 180°C. Lightly grease 4 large muffin pan moulds and line base with baking paper.
Step 2 of 4
Place spinach leaves into a bowl. Cover with boiling water and stand for 1 minute. Drain and cool. Squeeze liquid from spinach with your hands. Finely chop.
Step 3 of 4
Use 4 slices of ham to line each muffin mould, overlapping slightly, forming a nest. Spoon spinach into ham moulds. Top with chopped tomatoes. Break an egg into each mould. Season with sea salt flakes and freshly ground black pepper.
Step 4 of 4
Bake for 15-20 minutes or until egg is cooked. Remove nests from muffin moulds. Serve with toast and extra spinach leaves.
