  • 1 Woolworths Bakery half baguette, very thinly sliced
  • 2tablespoons extra virgin olive oil
  • 2 avocados
  • 1 lime, zest finely grated, then juiced
  • 10grams Woolworths chives, snipped
  • 1teaspoons siracha
  • 1 pinch chilli flakes
  • 2tablespoons coriander, chopped
  • 1tablespoons pistachio, chopped

Description

This dip uses nuts, giving the guacamole a great texture. You can replace pistachios with toasted macadamias or pine nuts if you prefer.

Method

Step 1 of 4

Preheat the oven to 180C or 160C fan-forced. Line a large baking tray with baking paper.

Step 2 of 4

Place baguette slices in a bowl. Add oil and season with salt. Toss to combine. Lay in a single layer, on the prepared tray. Bake for 15 mins, until the bread is crisp and golden. Set aside to cool.

Step 3 of 4

Halve avocados and remove stone. Place the flesh of 1 avocado in a bowl. Add lime zest and juice and mash until smooth. Add chives, siracha and chilli flakes. Stir to combine.

Step 4 of 4

Dice the remaining avocado. Add to the mashed avocado with coriander and gently stir to combine. Transfer to a serving bowl and top with pistachio and extra coriander leaves. Serve with crispy bread for dipping.
