  • 2teaspoons Dijon mustard
  • 6tablespoons olive oil, divided
  • 400grams sea bass, skin scored
  • 300grams mixed leaf salad (to serve)

Description

Punchy and herby salsa verde brightens up any dish and is especially good with grilled fish.

Method

Step 1 of 3

Add the salsa verde ingredients plus 5 tablespoons of olive oil to a food processor and blitz to a coarse sauce.

Step 2 of 3

Heat the oil in a large non-stick pan on high heat, brush the sea bass fillets with a tablespoon of oil and cook skin side down for 3 minutes, flip and cook for 2 more minutes.

Step 3 of 3

Serve the sea bass with salsa verde and salad, if desired.
