  • 200grams chicken breast fillet, halved horizontally
  • 2teaspoons Woolworths extra virgin olive oil
  • 2 spring onions, halved crossways
  • 1 whole cooked beetroot, thinly sliced
  • 30grams Woolworths baby spinach leaves
  • 125grams canned chickpeas, rinsed, drained
  • 2tablespoons aioli
  • 1/4 cup mint leaves (to serve)

Description

Mid-week meal prep just got easy with this delightful dinner recipes. Make this succulent grilled chicken breast and vibrant beetroot salad in 15 minutes.

Method

Step 1 of 3

Rub chicken with oil, then season with pepper. Heat a chargrill pan over high heat. Grill chicken and onion for 6 minutes, turning, or until chicken is cooked through and onion is charred and tender.

Step 2 of 3

Meanwhile, place beetroot, spinach and chickpeas in a bowl and toss to combine.

Step 3 of 3

Combine aioli and 2 tsp water in a small bowl. Arrange salad and chicken on a plate. Top with onion and drizzle with aioli. Season with pepper. Serve scattered with mint.
