Description
A green twist on a classic, this zucchini cacio e pepe recipe, with zucchini noodles, chilli, and parmesan, will have dinner on the table in 10 minutes.
Method
Step 1 of 4
Heat 3 tsp oil in a medium frying pan over medium-high heat. Add garlic and cook for 30 seconds, stirring, or until fragrant.
Step 2 of 4
Add zucchini, chilli flakes and pepper, then cook for 1 minute, stirring, or until zucchini is almost tender. Add half of the cheese and toss to coat.
Step 3 of 4
Meanwhile, combine salad mix, vinegar and remaining oil in a small bowl.
Step 4 of 4
Top zucchini with remaining cheese. Serve with salad.
