  • 2teaspoons Woolworths extra virgin olive oil
  • 2 cloves garlic, crushed
  • 1/2 red capsicum, deseeded, thinly sliced
  • 1 tomato, roughly chopped
  • 200grams canned borlotti beans, rinsed, drained (see Tip)

Description

This easy pasta recipe is perfect for a healthier dinner for one. This deliciously hearty pasta is nutritionally approved and ready in 20 minutes.

Method

Step 1 of 3

Cook pasta in a saucepan of boiling water according to packet instructions. Drain.

Step 2 of 3

Meanwhile, heat oil a large frying pan over medium-high heat. Cook garlic, capsicum, tomato and beans for 5 minute, stirring, or until capsicum is tender.

Step 3 of 3

Add pasta and lemon juice to pan and toss to coat. Add rocket and toss to combine. Season with pepper. Serve.
