- 1 small sweet potato, cut into 1.5cm pieces
- 60grams baby spinach leaves
- 2teaspoons extra virgin olive oil
- 1 Woolworths beef sausage with roasted garlic & parsley, casing removed and discarded, crumbled
- 2 free range eggs
- 1/4 cup milk
- 10grams parmesan, finely grated
Description
Filled with flavoursome goodies like sweet potato, crumbled beef sausage, spinach and parmesan, make this delicious frittata recipe in just 20 minutes.
Method
Step 1 of 3
Place sweet potato and 2 tsp water in a microwave-safe bowl. Microwave on high for 5 minutes, adding three-quarters of the spinach in the last minute of cooking, or until sweet potato is tender. Drain.
Step 2 of 3
Meanwhile, preheat oven grill to high. Heat oil in a small (15cm base) ovenproof frying pan over medium-high heat. Add sausage and cook for 3 minutes, stirring, or until browned.
Step 3 of 3
Whisk eggs and milk together in a small jug. Season. Add sweet potato mixture to pan and stir gently to combine. Add egg mixture and stir to combine. Cook for 3 minutes, without stirring, or until almost set. Sprinkle over half of the cheese. Grill for 2 minutes or until set. Serve topped with remaining spinach and cheese.
