  • 3 anchovy fillets, drained, finely chopped
  • 2teaspoons Woolworths Dijon mustard
  • 75grams parmesan, finely grated
  • 1/2 lemon, zested, juiced
  • 1 Woolworths sourdough baguette, thinly sliced diagonally
  • 5milliliter olive oil cooking spray
  • 3 baby cos lettuce, quartered
  • 200grams streaky bacon
  • 3 free range eggs, soft-boiled, halved
  • 1 bunch chives, finely chopped

Description

Try this Caesar salad with a tasty twist. Grilling the lettuce gives it a smoky flavour, caramelising the outside while the inside stays crisp.

Method

Step 1 of 4

Place yoghurt, anchovy, mustard, two-thirds of the parmesan, zest and lemon juice in a small bowl and whisk until combined. Refrigerate until required.

Step 2 of 4

Heat a chargrill pan over medium-high heat. Spray both sides of bread with oil. Grill for 2 minutes on each side or until golden and crisp. Spray cut-sides of lettuce with oil. Cook, cut-sides down, for 2 minutes or until charred and slightly wilted. Transfer lettuce to bowls.

Step 3 of 4

Cook bacon for 2 minutes on each side or until golden and crisp. Transfer to a paper towel-lined plate.

Step 4 of 4

Arrange bread, roughly chopped bacon and egg around lettuce. Drizzle with yoghurt dressing and sprinkle over remaining parmesan and chives. Season with pepper and serve.
