  • 100grams green curry paste
  • 2tablespoons fish sauce
  • 2 cup green beans
  • 1 red chilli, sliced
  • 500grams chicken breast, thinly sliced
  • 2 cup jasmine rice, steamed (to serve)
  • 2tablespoons basil leaves (optional)
  • 2tablespoons kaffir lime leaves (optional)
  • 3tablespoons oil

Description

Make Thai green curry at home. This chicken curry recipe is loaded with flavour from zesty kaffir lime and spicy red chilli.

Method

Step 1 of 4

Heat 1tbsp oil in a non-stick wok or frypan over medium-high heat. Add chicken and stir fry for 1 minute. Remove chicken and set aside.

Step 2 of 4

Heat remaining oil in same pan, stir-fry curry paste over low heat for 2 minutes. Add 150ml of coconut cream over medium heat.

Step 3 of 4

Add fish sauce, sugar and beans, stir & add remaining coconut cream & water. Bring to the boil, simmer until beans are cooked.

Step 4 of 4

Add chicken, chilli & kaffir lime leaves (if desired) and return to boil. Once chicken is cooked, add basil if using before removing from heat. Serve with steamed rice.
