- 1tablespoons coconut oil
- 300grams chicken stock, cooked and torn or chopped
- 3 medium shallots, sliced
- 100grams mushrooms, washed and sliced
- 2 medium carrots, peeled and chopped
- 80grams broccolini
- 300grams rice noodles, cooked as per pack instructions
- 2 cups chicken stock
- 100grams laksa paste
- 3/4 cup coconut milk
- 1 medium lime, juice only
Description
A spicy noodle and chicken soup with Asian spices.
Method
Step 1 of 3
Heat up a large pan to a medium heat with the coconut oil and fry the mushrooms, carrots and shallots for 6 minutes while stirring.
Step 2 of 3
Cook the noodles as per pack instructions and then drain and leave to one side. Add the rest of the ingredients apart from the broccolini to the large pan and combine fully to allow simmer for 15 minutes.
Step 3 of 3
After 15 minutes, add the noodles and broccolini and allow to simmer for a further 5 minutes before serving.
