Granny's Golden Syrup Dumplings

- 1 1/2 cup self-raising flour
- 1/3 cup milk
- vanilla ice cream (to serve)
- 40grams cold butter, chopped (plus 30g butter extra)
- 1/4teaspoons fine table salt
- 1tablespoons lemon juice
- 2tablespoons golden syrup (plus 1/2 cup golden syrup extra)
- 1 egg
- 1/2 cup brown sugar
Method
Step 1 of 4
Sift flour and salt in a large bowl. Using fingertips, rub in butter until it resembles breadcrumbs. Make a well in the centre. Whisk egg, milk and syrup together. Pour into the well and, using a flat-bladed knife, stir mixture until it just comes together into a soft dough.

To make the syrup, combine 2 cups water, 1/2 cup golden syrup, 1/2 cup brown sugar and butter in a medium saucepan. Stir over low heat, without boiling, until sugar dissolves. Bring to the boil over medium heat, then reduce heat to low and simmer for 2 minutes.

Using 2 dessertspoons, shape dough into tablespoon-sized balls and gently scrape off into simmering syrup. Cover and simmer for 10 minutes. Gently turn the dumplings over and poach for a further 5-10 minutes or until puffed and completely cooked through.
Step 4 of 4
Divide dumplings among serving bowls. Stir lemon juice into syrup in pan and spoon generously over dumplings. Serve with ice-cream.
