Banana & Coconut Dumplings

- 1 cup desiccated coconut
- 3/4 cup plain flour
- 300milliliter cream
- 2 bananas, chopped and sliced (banana to serve)
- 1teaspoons bicarbonate soda
- 200grams dark chocolate, broken
- 1/4 cup brown sugar
- 1L vegetable oil (for deep frying)
- 2 cup dried milk powder
Method
Step 1 of 3
Sift milk powder, flour and bicarbonate soda together into a bowl. Add coconut, brown sugar and banana and stir to combine. Add enough of the cream to form a soft, sticky dough.

Heat vegetable oil in a saucepan over a medium heat (you need the oil to be hot enough to seal the dumplings, but not so hot that the inside doesn't cook). Drop spoonfuls of mixture into the oil. Be careful not to overcrowd the pan. Cook for about 5 minutes until golden brown. Remove with a slotted spoon and drain on a paper towel.

Meanwhile, in a small saucepan, heat 3/4 cup of the remaining cream until near boiling. Remove from heat and stir in chocolate pieces until smooth. Serve dumplings with chocolate and sliced banana.
