  • 1/4 cup plain flour (for coating)
  • 1/2 cup plain flour
  • 1 1/2 cup self raising flour
  • 60grams butter, melted, cooled
  • 3/4 cup milk
  • 3teaspoons caraway seeds
  • 5 tomatoes, diced
  • 1 red capsicum, diced
  • 1 large brown onion, diced
  • 1/2 cup flat-leaf parsley leaves, finely chopped
  • 1tablespoons smokey paprika
  • 2 cup chicken stock
  • 1.20kilograms pork fillet, cut into cubes
  • 1/4 cup olive oil
  • 1/2 cup tasty cheese, grated
  • 2 cup cauliflower florets

Method

Step 1 of 11

Heat 1 tablespoon oil in a large heatproof casserole dish over a medium heat.

Lightly coat pork with flour. Add 1/4 of meat and cook for 5 minutes or until well browned. Transfer to a large plate.

Cook remaining portions of pork, adding more oil as required.

Step 4 of 11

Preheat oven to 200°C.

Heat remaining oil in casserole dish. Add onion and cook, stirring often for 3-4 minutes or until soft. Stir through paprika and cook for 1 minute. Add capsicum, tomatoes and stock. Bring to the boil. Return pork to casserole.

Cover and place in oven for 45 minutes. Add cauliflower and cook for 15 minutes. To make dumplings:

Sift flours into a bowl. Stir in cheese, parsley, and caraway seeds. Make a well in the centre and pour in milk and melted butter. Stir to form a soft dough.

Roll tablespoon of dough into small balls. (Makes approx. 34 dumplings).

Remove casserole from oven and remove lid. Place dumplings on top.

Replace lid, return to oven and cook for a further 20-25 minutes or until cooked through.
