  • 1 small brown onion, thinly sliced into rounds
  • 500grams chicken breast fillets, thinly sliced
  • 35grams taco seasoning mix
  • 8 Free From Gluten white corn tortillas
  • 420grams corn kernels, rinsed, drained
  • 1 cup Mexican inspired cheese blend
  • 1/2 bunch coriander, leaves picked (plus etxra leaves to serve)
  • 1 large avocado, deseeded, chopped
  • 1 lime, cut into wedges (to serve)

Method

Step 1 of 5

Heat half the oil in a large frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until light golden. Transfer to a bowl.

Heat remaining oil in same pan over medium-high heat. Add chicken and seasoning, then cook, stirring, for 4 minutes or until chicken is cooked through.

Preheat a sandwich press. Place tortillas on a flat surface. Top one half of each tortilla with spiced chicken, onion, corn, cheese and coriander. Fold tortillas over to enclose filling. Cook quesadillas in sandwich press, in batches, for 5 minutes or until golden and heated through.
Instruction tip

You can cook quesadillas in a large frying pan over medium-high heat, turning halfway through cooking. Cooking time may be slightly longer in a pan.

Meanwhile, place avocado in a small bowl. Season. Using back of a fork, smash avocado until almost smooth.

Step 5 of 5

Cut quesadillas cut into wedges and scatter over extra coriander. Serve with avocado and lime wedges.
