- 1tablespoons Dijon mustard
- 1 clove garlic, crushed
- 1/4 cup extra virgin olive oil
- 1 small red onion, diced
- 2tablespoons drained baby capers
- 1 cup sour cream
- 1tablespoons dill, chopped

Description
Dress up baked potatoes with a dollop of sour cream and a drizzle of zingy mustard and caper vinaigrette. A great side dish when entertaining family or guests.
Method
Step 1 of 5
Cook potatoes according to packet instructions.
Step 2 of 5
Place vinegar, mustard and garlic in a small bowl, whisking with a fork until combined. Slowly add oil, whisking until combined.

Place potatoes in a bowl and drizzle over half the dressing, tossing to combine.
Step 4 of 5
Line a large baking tray with baking paper and transfer potatoes to tray. Bake for 15 minutes or until golden and tender, then cool slightly before cutting a small cross into
tops of potatoes. Add diced onion and capers to remaining dressing, stirring to combine.
Step 5 of 5
Dollop a little sour cream on top of potatoes and spoon over a little dressing. Top with dill, season and serve.
