- 190grams Free From Gluten pizza base
- 2 medium washed white potatoes, peeled, thinly sliced
- 1tablespoons extra virgin olive oil (plus extra to serve)
- 1 clove garlic, thinly sliced
- 2 sprigs rosemary, leaves picked, roughly chopped
- 1 cup mozzarella, shredded
- baby rocket leaves (to serve)
Description
Satisfy all of your cheesy pizza cravings with this gluten-free pizza recipe. This family-friendly dinner is easy to double or even triple.
Method
Step 1 of 3
Preheat oven to 240°C/220°C fan-forced. Line a baking tray with baking paper. Place pizza base on tray.
Step 2 of 3
Place potato on a large microwave-safe plate. Cover. Microwave on high for 1 minute or until just tender. Transfer potato to a bowl. Add oil, garlic and rosemary. Season. Toss gently to coat.
Step 3 of 3
Sprinkle pizza base with two-thirds of the mozzarella. Arrange potato slices, slightly overlapping, over cheese. Sprinkle with remaining mozzarella. Bake for 15 minutes or until potato is tender and base is golden and crisp. Serve pizza topped with rocket and drizzled with a little extra oil.
