- 200milliliter thickened cream (optional to serve)
- 100grams butter, chopped
- 1 1/2teaspoons vanilla extract (save 1/2 tsp for gluten free crumble)
- 4 Royal Gala apples
- 1/4 cup shredded coconut
- 4 fresh dates, seeds removed, finely chopped
- 1/2teaspoons mixed spice
- 3tablespoons maple syrup (save 2 tbs for gluten free crumble)
- 1/2 cup almond meal
- 1 cup quinoa flakes
- 1 cup walnuts
- 1/2 cup cloudy apple juice

Step 1 of 3
Preheat oven to 180°C fan-forced. Lightly grease a 16x21cm ovenproof baking dish.
Step 2 of 3
Cut unpeeled apples into quarters, remove core and thinly slice. Combine apples and dates in a medium saucepan with apple juice, spice, vanilla and maple syrup. Bring to the boil, remove from heat. Spoon into prepared baking dish.

To make the gluten-free crumble, place butter, walnuts, almond meal, quinoa flakes, coconut, spice, vanilla and syrup in a food processor and pulse until nuts are chopped but not too fine so that there is some texture. Scatter over the apple and date mixture. Bake for 35-40 minutes or until golden and apple is tender. Stand for 5 minutes before serving. Serve with thick cream, if using. Tip 1: Use rolled oats instead of quinoa flakes in this recipe. You can use dried dates if fresh are unavailable. Tip 2: This crumble is great served in plastic airtight containers cold in lunch boxes the next day. Tip 3: This dessert can be made in individual ramekins.
