  • 175grams butter, chopped
  • 1/3 cup maple syrup
  • 1/2 cup caster sugar
  • 350grams Free From Gluten apple & cinnamon muesli
  • 1/2 cup currants
  • 1/2 cup almond kernels, roughly chopped
  • 2tablespoons black chia seeds
  • 1/2 cup Free From Gluten plain flour

Description

After an easy gluten-free treat? This muesli bar recipe is jam-packed with tasty seeds, dried fruit and nuts.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Grease a 20 x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm above edges.

Step 2 of 3

Place butter, syrup and sugar in a small saucepan over medium heat. Cook, stirring, for 5 minutes or until butter has melted and sugar has dissolved. Bring to a simmer over medium-high heat. Simmer, uncovered, for 2 minutes or until mixture has reduced slightly. Remove pan from heat.

Step 3 of 3

Meanwhile, combine remaining ingredients in a large heatproof bowl. Add butter mixture and stir well to combine. Using back of a metal spoon, press mixture into pan, pressing to compact. Bake for 30 minutes or until light golden and firm to touch. Cool completely in pan. Cut into pieces to serve.
