- 2 celery stalks (thinly sliced)
- 1 fennel bulb (thinly sliced)
- 2 baby cos lettuce (leaves separated)
- 2tablespoons extra virgin olive oil
- 2teaspoons honey
- 1 cup gluten-free Macro pecans (roughly chopped)
- 2/3 cup gluten-free Macro Organic quinoa
- 3/4 cup Jalna gluten-free whole milk lactose free yoghurt

Step 1 of 3
Cook gluten-free quinoa according to packet directions. Cool completely.
Step 2 of 3
To make the dressing, combine all ingredients in a small bowl and season.
Step 3 of 3
Place quinoa in a large serving bowl. Add pecans, apple, celery, fennel and lettuce leaves. Add half the dressing, tossing to combine. Drizzle with remaining dressing, then divide among four plates and serve.
