  • 1 cup gluten-free Macro pecans (roughly chopped)
  • 2/3 cup gluten-free Macro Organic quinoa
  • 3/4 cup Jalna gluten-free whole milk lactose free yoghurt

Method

Step 1 of 3

Cook gluten-free quinoa according to packet directions. Cool completely.

To make the dressing, combine all ingredients in a small bowl and season.

Place quinoa in a large serving bowl. Add pecans, apple, celery, fennel and lettuce leaves. Add half the dressing, tossing to combine. Drizzle with remaining dressing, then divide among four plates and serve.
