  • 1 small banana, sliced (to serve)
  • strawberries (to serve)
  • honey (to serve)
  • Greek-style yoghurt (to serve)
  • 375grams gluten free butermilk pancake mix
  • 2tablespoons extra virgin olive oil (to grease pan)

Method

Step 1 of 4

Prepare Gluten-Free Buttermilk Pancake Mix according to instructions on the bottle.

Step 2 of 4

Heat a large non-stick frying pan over medium-high heat and grease lightly with a little butter.

Step 3 of 4

Pour mixture into pan to make 8cm diameter pancakes. Cook until bubbles show on the surface then flip and cook other side until golden.

Step 4 of 4

Transfer to plates, top with yoghurt, sliced banana and strawberries and drizzle with a little honey.
