- 1tablespoons extra virgin olive oil
- 500grams chicken breast fillets, sliced
- 25grams Nando's Lemon & Herb PERi-PERi Rub
- 175grams tortilla chips
- 1 cup grated tasty cheese
- 1 Nando's Mild PERinaise, to drizzle
- 200grams tomato medley, quartered
- 1 large avocado, diced
- 1 small red onion, finely chopped
- 1/3 cup coriander leaves
- 1 lime, cut into wedges (to serve)
Description
Whether you're having dinner with the family or entertaining guests, this flavour-packed nachos recipe with a hint of spice will be a hit.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease and line a baking dish with baking paper.
Step 2 of 4
Heat oil in a large non-stick frying pan over medium-high heat. Combine chicken and rub in a bowl. Add to pan. Cook, turning, for 5 minutes or until browned. Remove from heat.
Step 3 of 4
Arrange corn chips in prepared dish. Top with chicken and half the grated cheese. Drizzle with PERinaise. Bake for 10 minutes or until cheese melts and is golden brown.
Step 4 of 4
Meanwhile, combine tomato, avocado, onion and coriander in a bowl. Top nachos with tomato mixture and remaining cheese. Drizzle with PERinaise. Serve with lime wedges.
