- 2teaspoons vegetable oil
- 275grams The Spice Tailor Thai red curry kit
- 500grams chicken thigh fillets, cut into 3cm pieces
- 200grams green beans, trimmed
- 450grams Sunrice microwave jasmine rice
- 1/4 bunch coriander, sprigs picked (to serve)
Description
Have this aromatic Thai red curry on the table in just 15 minutes. This easy chicken curry recipe is the perfect hassle-free family dinner.
Method
Step 1 of 4
Heat oil in a large, deep frying pan over medium-high heat. Remove kaffir lime leaves from spice pouch in curry kit, then add spices and cook for 1 minute, stirring, or until fragrant. Add chicken and cook for 4 minutes, stirring, or until browned. Add spice paste from curry kit, then cook, stirring, for 1 minute to coat. Add coconut sauce sachet, reserved kaffir lime leaves and 1 tbs water, then stir to combine. Reduce heat to medium and simmer, uncovered, for 4 minutes or until chicken is cooked through.

Meanwhile, cook beans in a medium saucepan of boiling water for 2 minutes or until bright green and tender. Drain.
Step 3 of 4
Heat rice according to packet instructions.
Step 4 of 4
Divide rice and curry among bowls, then top with beans and scatter over coriander. Serve.
