  • 3/4 cup caster sugar
  • 2teaspoons vanilla extract
  • 1 Woolworths free range egg
  • 2 cups plain flour
  • 1/4teaspoons salt

Description

These easy sugar cookies are so simple to make with our easy-to-follow techniques. Use this cookie recipe as a base and get creative with icing decorations.

Tip:
Avoid over-beating the butter and sugar mixture as this can lead to the mixture becoming too soft. This, in turn, can cause the cookies to spread excessively as well as lose their shape during baking.

Method

Step 1 of 5

Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg, beating until combined. Sift flour and salt over butter mixture, then beat on low speed until just combined.

Step 2 of 5

Divide dough into 2 portions and place on separate sheets of baking paper. Cover each with another sheet of baking paper and, using a rolling pin, roll out until dough is 5mm thick. Slide dough portions, still sandwiched between baking paper, onto 2 baking trays and refrigerate for 1 hour to chill.

Step 3 of 5

Preheat oven to 170°C/150°C fan-forced. Line 2 baking trays with baking paper.

Step 4 of 5

Remove top sheet of baking paper from 1 portion. Using a 6cm fluted round cutter, cut rounds from dough, re-rolling scraps. Place 4cm apart on trays. Bake for 12 minutes or until slightly firm, but not browned. Stand on trays for 10 minutes before transferring to a wire rack to cool completely. Repeat with remaining dough portion.

Serve as is or decorate with icing.
