  • 3 free range egg whites
  • 4 1/2 cups pure icing sugar, sifted
  • 1 1/2teaspoons lemon juice
  • 2-3 drops assorted food colouring
  • 1 quantity Easy sugar cookies
  • 1teaspoons assorted sprinkles

Description

Set yourself up for cookie success with this easy royal icing recipe that is perfect for outlining and flooding sugar cookies. It's simple to work with and tastes delicious.

Method

Step 1 of 6

Place 3 free range egg whites in a bowl and whisk with a balloon whisk until frothy.

Step 2 of 6

Add 4 1/2 cups sifted pure icing sugar to egg, 1 tbs at a time, whisking well in between each addition. Add 1 tsp lemon juice.

Step 3 of 6

Divide icing mixture into 6 bowls. Colour icing green, orange, blue, pink, and yellow, and leave one bowl plain.

Step 4 of 6

Spoon one-third of each icing into piping bags fitted with a 2mm plain nozzle. (This icing will be used to pipe a border around the edge of the cookies.)

Step 5 of 6

Add a drop of water to each remaining bowl of icing. Spoon icing into piping bags fitted with a 2mm plain nozzle. (This icing will be used for flooding the cookies.)

Step 6 of 6

Using 1 cookie at a time and border icing, pipe an outline around the edge of the cookie. Then, using flooding icing, fill inside the cookie to cover the cookie. Set aside. Repeat with remaining cookies and icings. Decorate cookies as desired, adding extra features – such as eyes and feet – with a little melted dark chocolate or sprinkles. Set aside for 6 hours or until icing has set.
