  • 2 Lebanese cucumbers
  • 1 carrot
  • 4 Woolworths crusty jumbo long bread rolls, split
  • 1/3 cup Woolworths sweet chilli sauce
  • 1/2 bunch Woolworths coriander, leaves picked

Description

Bursting with Vietnamese flavours, pork belly banh mi makes a tasty weeknight dinner. It's simple to make and easy on the wallet, too.

Method

Step 1 of 4

Preheat air fryer to 180°C. Pat the pork dry with paper towels. Score the rind in a criss-cross pattern using a sharp knife. Rub over with oil. Season generously.

Step 2 of 4

Place in the air-fryer basket and cook for 30-35 minutes, or until pork is cooked through and crackling is golden-brown. Transfer to a board. Cover loosely with foil. Rest for 5 minutes.

Step 3 of 4

Meanwhile, using a vegetable peeler, peel cucumber into ribbons. Cut carrot into matchsticks.

Step 4 of 4

Thinly slice pork. Spread 2 tsp sweet chili sauce inside rolls. Fill rolls with cucumber, carrot and a few slices of pork. Top with coriander and drizzle with remaining sauce. Serve.
