- 1 Woolworths country-style hot roast chicken, cooled
- 2 spring onions
- 2 carrots
- 2 continental cucumbers, halved lengthways
- 1 lime
- 1/2 cup mayonnaise
- 4 crusty jumbo long bread rolls
- 1/2 bunch coriander, springs picked
- 1 long red chilli, sliced
- 1tablespoons soy sauce
- 1tablespoons sesame seeds, toasted
Description
Containing all the delicious flavours of the iconic Vietnamese sandwich, this budget-friendly chicken banh mi recipe makes a simple weeknight dinner.
Method
Step 1 of 4
Remove skin from chicken. Shred meat from bones. Discard skin and bones. Place chicken in a large bowl.
Step 2 of 4
Cut onion into long, thing strips. Cut carrot into matchsticks.
Step 3 of 4
Cut each cucumber half into long wedges. Zest lime, then cut into wedges. Combine zest and mayonnaise in a bowl.
Step 4 of 4
Using a small sharp knife, cut down centre of each roll, not all the way through, to open slightly. Spread roll with 2 tbs lime mayonnaise. Fill rolls with cucumber, carrot, chicken, onion and coriander. Sprinkle with chilli. Drizzle with soy sauce, then remaining mayonnaise. Sprinkle with sesame seeds. Serve with lime wedges.
